Marie Louise Scio’s
Crispy Chicken, Valerian and Avocado with Chia Seeds Recipe

Ingredients

Chicken Breast – 2

Ripe Avocado – 1

Lemon – 1

Eggs – 2

Valerian – 160g

Kia Seeds – 60g    

Low Fat Yogurt 125g

Panko Breadcrumbs – 500g

Flour 100g

Seed Oil for Frying

Extra Virgin Olive Oil

 

Cut the chicken into strips and pass it in the flour, beaten egg and panko bread, pass it again in the egg and panko, breading it twice the chicken turns out to be more crisp and dry.


Peel the avocado, cut it into pieces and put it in a tall container, add the juice of half a lemon, a pinch of salt, yogurt and a drizzle of extra virgin olive oil, blend until you get a mayonnaise.


Fry the chicken in hot seed oil, when golden brown drain on absorbent paper, salt and put it on a flat plate, add the avocado mayonnaise and the valerian topped with oil, salt, lemon and chia seeds.
